Preserving pears: a basic recipe

With this simple basic recipe for pickled pears you can keep your harvest for over a year. If you want different flavors, you can vary the recipe to taste with different spices, wine or juice. Some suggestions you will find this in the next section.

  1. Choose pears that are not too soft and have no brown spots.
  2. Peel the fruit, remove the core and cut the pears into wedges or cubes.
  3. Take sufficiently large boiled glasses to hand and fill them with the pear pieces.
  4. Put plenty of water in a saucepan, bring it to a boil and dissolve a few tablespoons of sugar in it.
  5. Fill the glasses filled with pears up to the top with the cooled sugar water.
  6. Boil the carefully sealed jars at 90 ° C for 30 minutes. You can do this either in a large saucepan filled with a little water or in the oven by placing the glasses in the drip pan filled with water.

Pears in red wine and other specialties

Red wine, cinnamon, Cloves and other aromatics give the pickled pears a unique taste with which they for example, the highlight of a winter dessert or the Christmas roast tastefully accompany.
Some tasty variations for the recipe described above can be found in the following list:

  • some aromatics that go well with pears: cinnamon, vanilla, cloves, cardamom, anise, chilli, rum, brown sugar
  • Red wine pears: Use a good red wine instead of water. Add spices according to your personal taste. Cinnamon and cloves are particularly suitable.
  • Pears in white wine and apple juice: Replace the water in the basic recipe with white wine and apple juice in a ratio of 1: 2. Here, too, you can go all out with the aromatics: cinnamon, vanilla, cloves and a good dash of rum refine the preserved pears.
  • Use caramelized sugar: Instead of dissolving the sugar in the selected liquid, you can let it caramelize and deglaze it to get a particularly fine taste. Put the white or brown sugar in a saucepan, let it melt in it, stirring constantly, and quench it with water, wine or juice while it is still light brown.
