The necessary utensils

You need suitable glasses for preserving. These can be:

  • Classic mason jars with lids, rubber rings and metal clips,
  • Lid with twist-off closure and intact seal,
  • Glasses with rubber ring and permanently attached metal bracket. However, these are only suitable to a limited extent, as the vacuum is difficult to check.

You can boil down mirabelle compote in a wake-up pot or in the oven.

ingredients

  • 1 kg mirabelle plums
  • 300 g of sugar
  • 900 ml of water

Only use fruit that is in perfect condition and has no bruises or even mold. The mirabelle plums should be ripe, but not overripe.

Canning mirabelle plums is not difficult. However, it is important to work meticulously so that no germs get into the glasses. First rinse them out and then sterilize the vessels in boiling water for 10 minutes. Let the jars cool upside down on a tea towel.

  1. Remove the stalks from the mirabelle plums and wash the fruit carefully.
  2. Halve with a sharp knife and take out the stone.
  3. Alternatively, you can Core the mirabelle plums with a plum pitter and boil down the mirabelle plums whole.
  4. Bring the water to the boil and pour in the sugar.
  5. Stir thoroughly, all crystals must dissolve completely.
  6. Layer the mirabelle plums in the glasses and pour the hot sugar solution over them. There should be a two centimeter distance to the edge of the glass.
  7. Close the jars and place them on the grate of the cooking pot.
  8. Pour in water until the glasses are three-quarters in the water bath.
  9. Wake up at 90 degrees for 30 minutes.
  10. Remove the mirabelle compote and allow to cool.
  11. Check that a vacuum has formed in all glasses. Store in a cool and dark area.

Preserving in the oven

  1. Place the glasses in the drip pan and pour two centimeters of water.
  2. Slide into the oven on the lowest rail.
  3. Turn on the oven to 180 degrees.
  4. As soon as bubbles rise in the mirabelle compote, switch off and leave the glasses in the tube for another 30 minutes.
  5. Take out and let cool.
  6. Check that all vessels are tightly closed.

Tips

You can round off the taste of the mirabelle compote with cinnamon, star anise or vanilla. This flavored dessert goes particularly well with chocolate mousse or quark dishes.
