Before canning: sterilize jars

Jars with glass lids, rubber rings and clips are just as suitable for preserving as twist-off glasses or glasses with rubber rings and clip closures. Make sure that the containers and the rubber are undamaged. It is also important that you carefully make all containers sterile.

  1. To do this, take a large saucepan and fill it with water.
  2. Put in jars, rubber rings and lids.
  3. Bring the water to a boil and leave the vessels in it for a while.
  4. Take everything out with tongs and let dry on a clean tea towel.

Recipe for sweet and sour cabbage florets

Ingredients for 3 - 4 glasses of 500 ml each:

  • 1 kg of cauliflower
  • 500 ml of water
  • 250 ml white balsamic vinegar
  • 250 grams of sugar
  • 50 g of salt
  • 1 tbsp mustard seeds
  • 3 cloves of garlic
  • 2 bay leaves
  • 1 g citric acid

preparation

  1. Wash cauliflower, Cut out the stalk and divide into small florets.
  2. Fill a large saucepan with water, add the citric acid and bring to the boil briefly. Blanching with this antioxidant keeps the cauliflower nice and white.
  3. Drain and layer tightly in mason jars. There should be about two centimeters of space at the top.
  4. Bring the water with balsamic vinegar, sugar and the spices to the boil.
  5. Pour the hot liquid over the cauliflower. Use a spoon handle to loosen any bubbles in the glass.
  6. Wipe the edge of the glass, put on the rubber ring and cover and put on the clamp.
  7. Place on a wire rack in the cooking pot. Fill in enough water that three quarters of the glasses are in the water bath.
  8. Boil for 90 minutes at 100 degrees.
  9. Let the glasses cool down, remove the clips.

Tips

Preserved foods are also a great gift for loved ones. It looks extremely nice if you alternate between layering cauliflower and broccoli instead of just cauliflower. All further steps are the same as in the recipe above.
