Recipe for pickling pearl onions
You need:
- 600 g pearl onions
- 250 ml white wine vinegar
- 75 g sea salt
- 3 tbsp sugar *
- 3-4 hot chili peppers
- 2 tbsp mustard seeds
- 2 bay leaves
- 1 tbsp fennel seeds
- water
- Mason jars **

* We advise you to avoid normal granulated sugar despite the small amount and to use birch sugar instead. This has almost the same sweetening effect, but is more beneficial to your health.

How to pick pearl onions correctly
- First, blanch the onions in boiling water for 30 seconds.
- Drain the pearl onions using a sieve.
- Briefly rinse the onions with cold water.

- Pour the white wine vinegar, sugar and all the spices into the saucepan.
- Add 100 milliliters of water.
- Now throw the pearl onions into the pot as well.
- Boil the mixture.
- Let the mix cook for two to five minutes, depending on the size of the onion.
- Take the pot off the hob.
- Fill the broth, including the pearl onions, full to the brim in the sterilized preserving jars.
- Immediately close the jars tightly.
- Place the mason jars with the pickled pearl onions in a dark and cool place.
- Let the whole thing steep for at least three to four weeks.
Tips
The spicy pickled pearl onions usually keep in the refrigerator for up to three months.
