Important information about mirabelle plums
The small yellow fruits ripen from July to September. They are related to the plums and are also called "yellow plums". Since mirabelle plums spoil quickly, they should be eaten or processed quickly.
You can combine a wide variety of spices with the sweet aroma of mirabelle plums. Try it with vanilla pods, cinnamon sticks, cardamom capsules, but also with ginger, star anise or lavender.

Wake up mirabelle plums
- Wash the mirabelle plums under running water.
- Sterilize mason jars, lids, and rubbers. The rinsed glasses can be dried in the oven at 120 degrees for 10 minutes. Boil the gums in the saucepan for 10 minutes.
- Cut the fruit in half and remove the stone. You sort out damaged fruit.
- Layer the fruits in the jars.
- Prepare a sugar solution for infusion. 1 l of water and 500 g of sugar are enough for approx. three glasses.
- Boil the water and sugar.
- Pour the hot brew over the fruits until they are covered. The fruits that look out of the brew will turn brown after a while and no longer look nice.
- Close the jars with screw caps or rubber rings and glass lids and clips.
- Put the jars in the boiling machine and pour in enough water until the jars are halfway in the water.
- Cook in the oven, place the glasses in the drip pan and fill about 2 cm of water.
The mirabelle plums are cooked for 30 minutes at 90 degrees in the automatic cooker and for half an hour at 100 degrees in the oven.
When the cooking time is over, the glasses remain in the pot for some time. Oven and then cool completely under a tea towel. Preserved mirabelle plums can be kept for several months. It can happen that a jar stays open when it is boiled down. The contents are best consumed immediately or frozen. If a jar opens after a long time, the contents are spoiled and should be disposed of.
