The season is short - the appetite is great
Every year sometime in May, the asparagus season begins for the asparagus grown in this country. Connoisseurs like this better than the well-traveled imported goods. But no later than 24. June, Midsummer Day, the season is over again. These few weeks are the right time to fill the freezer with the vegetables.

Tips
The season starts with a proud asparagus price. Wait a little longer before freezing, because towards the end the delicious sticks are usually cheaper to get.
Peel beforehand whenever possible
There are some indications that the shell of the bars should be peeled before freezing:
- the asparagus is eaten without the skin
- the frozen sticks are ready for immediate use
- Thawed asparagus is soft, which makes peeling difficult
- Later peeling is not necessary and saves time when cooking
Freeze the asparagus unpeeled
Every single rod wants to be freed from its shell. This can take a lot of time. When time is tight, the question arises: Postpone the freezing for a few days or freeze the asparagus unpeeled?
The fresher the asparagus is frozen, the better its quality after thawing. Therefore, you shouldn't wait long to freeze. If necessary, the sticks can also be peeled before cooking.
After washing, the dried sticks are simply packed in freezer bags. The trapped air should be forced out and the bag closed tightly.
This is how frozen asparagus can be peeled
Thawed asparagus spears lose their firmness. They are soft in the hand and peeling becomes impossible. That is why they have to be peeled before they thaw completely. Su it works best:
- Prepare a bowl of warm water. The bowl should be big enough to fit individual asparagus spears.
- Take the frozen asparagus spears out of the freezer.
- Dip a rod in the warm water for about 3 seconds. This will thaw the thin shell.
- Now peel off the peel with an economy knife. Be careful when doing this, as the frozen sticks are fragile.
- Then continue with the next stick until you have peeled all of the asparagus.
Shelf life and use
The shelf life of frozen asparagus is 6 to 8 months if it is continuously cooled to minus 18 degrees Celsius.
It is sufficient if only the outer shell is thawed so that the asparagus can be peeled. In addition, the asparagus should not be thawed any further, but should be processed further immediately.
