Remove asparagus leaves
After the 24th June the asparagus harvest ends, as the vegetables need rest from this point on to regenerate. It is equally important that you remove the withered asparagus leaves annually in late autumn. In this way, too, you encourage the repetitive growth of the poles.
Easy harvest
Green asparagus is not as popular in Germany as the white variety, but in terms of harvest it beats white asparagus thanks to the lower effort. You have to prick white asparagus as soon as its head reaches the surface of the earth. Green asparagus, on the other hand, grows in the sun right from the start and can be easily cut off as soon as the stalks are thick enough. It is best to place the knife just above the ground.
Tips
Green asparagus can also be used in the kitchen without much effort. It is softer than white asparagus, so it rarely needs to be peeled and, as an alternative to cutting, it can also be broken. Before eating, however, always remove the lower, partly still pale end, as this has hardly received any sunlight and therefore does not lose its woody consistency when cooked.
