Why raspberries won't let dry

The water content of raspberries is over 80 percent. When the fruit is dried, the water is completely removed. Ultimately, only the shells and kernels remain.

To eat dried raspberries, you'd have to soak them in water. The fruits then taste very weak and have a bitter aftertaste. Many of the valuable ingredients are lost during drying.
