Wash broccoli in clean water
Asparagus cabbage is always washed before cutting. Proceed as follows:
- Pour cold water into the sink. Never use warm water, as this can wilt the delicate florets.
- Add the vegetables, soak them briefly and toss them a little.
- Then hold the broccoli under running water to rinse off any loosened dirt. Run your fingers over all the florets and carefully bend them apart so that the water can reach all the spots.
- Thoroughly shake off the asparagus cabbage and pat dry with a clean cloth before preparing.

Clean broccoli in vinegar solution
This method is very good at removing dirt, pesticides and bacteria:
- Fill a bowl large enough to completely submerge the asparagus cabbage with water.
- Add a good dash of vinegar.
- Put the broccoli in for about 15 minutes.
- Take out the vegetables and wash the vegetables thoroughly under running water, also between the florets.
- Shake dry and blot with a cloth.
Salt water bath against pests
The vinegar bath can do little to harm cabbage worms and small worms. In the case of free-range broccoli, it is therefore advisable to clean the vegetables in salt water:
- Fill a large bowl with cold water and dissolve one to two tablespoons of salt in it.
- Place the asparagus cabbage in the salted water and let it soak for ten to fifteen minutes.
- Keep moving your head in the salt water so that the insects are rinsed out.
- Thoroughly clean under running water.
- Carefully bend the florets apart to remove any pests.
- Shake off and dab off.
Clean the broccoli
Before you can start cooking, the asparagus cabbage must be cut up. This is important because the stump cubes take a slightly longer cooking time than the florets:
- Cut off dry, inedible stalk ends and coarse leaves.
- Separate the florets one by one from the stalk with a sharp kitchen knife.
- Save the tender leaves, they can be cooked or chopped to decorate the dish.
- Peel the stems and cut them into bite-sized cubes.
Tips
Broccoli cooks very quickly. First let the diced stalk simmer in boiling salted water for a minute. Then add the florets. Cook for four to five minutes and the vegetables are firm to the bite.
