Jerusalem artichoke soup with turmeric

Ingredients for 4 servings
- 400 g Jerusalem artichoke
- 1 leek
- 2 carrots
- 100 g potatoes
- 1 onion
- 2 cloves of garlic
- 20 g coconut oil
- 400 ml vegetable stock
- 250 g coconut milk
- 1 walnut-sized piece of ginger
- 2 teaspoons turmeric powder
- 1 teaspoon curry powder
- Salt to taste
preparation
- Wash and clean vegetables.
- Dice the Jerusalem artichoke, potatoes and onions, slice the carrots and cut the leek into rings.
- Heat coconut oil and sauté the onion until translucent.
- Put the finely diced garlic and vegetables in the pot and sauté briefly.
- Deglaze with vegetable stock.
- Add coconut milk and spices and cook for about 15 minutes until the vegetables are soft.
- Puree with the hand blender and season to taste again.
Jerusalem artichoke patties with horseradish dip
Quickly prepared, these pancakes are a full-fledged dish. They also taste great as a side dish to fried meat. In this case, half the amount is sufficient.

Patties
- 1 kg Jerusalem artichoke
- 1 onion
- 50 g sunflower seeds
- 3 - 4 tbsp flour
- 2 eggs
- 2 tablespoons oil
- Salt and pepper to taste
Horseradish Dip
- 250 g ricotta
- 100 g yogurt
- 3 teaspoons of horseradish from the jar
- 1 teaspoon paprika powder
- ½ teaspoon each of pepper and salt
preparation
- Wash, peel and roughly grate the Jerusalem artichoke and onion.
- Mix with the eggs, sunflower seeds, spices and flour to make a thick mixture.
- Heat oil in a pan.
- Shape small buffers and bake until crispy.
For the dip, combine all the ingredients in a bowl and serve with the patties.
Tips
As healthy as Jerusalem artichoke is, the intestinal flora has not yet got used to the fiber, which can lead to unpleasant gas or diarrhea. You should therefore first consume a maximum of half a tuber. You can, for example, process these into puree together with potatoes or nibble peeled and raw. Once the digestive system has got used to the fiber, the unpleasant side effects no longer occur.
