Preserve sweet cherries

For this you need fresh cherries, sugar, spices according to your taste (e.g. B. Cinnamon stick) and sterilized mason jars. Regardless of which glasses you prefer, they should all be boiled before use or sterilized in the oven for ten minutes at 100 degrees.

  1. Wash your cherries, remove the stems and stones. Use a cherry pitter for pitting, which only drills a small hole in the fruit and pushes the pit out in the process.
  2. Collect the finished cherries in a bowl.
  3. Then boil a sugar solution made from water and sugar. The amount of sugar depends on your taste. Add the spices, such as a cinnamon stick, a star anise, anise blossom or a clove to the brew.
  4. Now fill the prepared cherries into the glasses, but leave about 2 cm of space towards the edge.
  5. Then pour in the sugar solution. Make sure that some of the spices get into each glass and that the fruit is completely covered with liquid. Use one when filling funnel,(€ 4.58 at Amazon *) then nothing goes wrong.
  6. Dry the rim of the jars and seal them.

In the preserving machine

Place the glasses in the wake kettle with a little space between them and fill them with enough water so that the glasses are up to halfway in the water. Cook the cherries at 90 degrees for half an hour. The cooking time begins when the specified number of degrees is reached. Then the glasses cool down a little in the kettle and are then covered with a cloth and placed on the worktop to cool down completely.

In the oven

Place the glasses in the drip pan and pour 2 cm of water. Push the drip pan into the oven and set a temperature of 175 degrees (convection). As soon as the cherries are boiling, small bubbles will rise in the glass, turn off the oven. Leave the jars in the oven for half an hour, then place them under a cloth on the countertop to cool completely.
