Autumn is shopping and harvest time
More and more types of sweet potato are coping with the climatic conditions in this country. Nothing stands in the way of cultivation in your own garden. By autumn at the latest, the motto is: what to do with the big harvest?
The tubers are available all year round in the supermarket, but here, too, only the autumn price is temptingly low.
Never freeze raw
Sweet potatoes that are frozen raw lose their texture and taste. However, you do not have to do without freezing entirely. If you invest some working time beforehand and cook the sweet potatoes, they will remain edible even after thawing.
Cook the sweet potatoes until done
Blanching is not enough with these vegetables. The sweet potato needs to be cooked completely.
- Clean the tubers under running water, using a vegetable brush as well.
- Now cook the sweet potatoes unpeeled so that the ingredients are better preserved. If you prefer, you can of course peel the tubers beforehand.
- After about 20 minutes, check that the potatoes are cooked. To do this, pierce it with a fork or knife.
- Pour off the cooking water and let the cooked potatoes cool down completely.
- Wrap each potato in aluminum foil and place it in a freezer bag and then in the chest.
Freeze slices and cubes
Since the tubers are quite large, it sometimes makes sense to freeze them cut into small pieces for later use.
- Peel the tubers before cooking
- or after they are cooked and cooled
- optionally cut into thin or thick slices
- Throwing the dice is also an option
Thaw the sweet potatoes again
Frozen pieces of sweet potato can easily be added to stews and other cooking dishes.
Whole sweet potatoes can be thawed in the oven and ready to eat. First, the old aluminum foil is replaced with new one. Then, depending on their size, they are placed in the oven for around 20 to 30 minutes at 180 degrees Celsius.
Tips
Organic sweet potatoes do not have to be peeled at all. Their peel is edible and tastes good too.
Shelf life in the freezer
Pre-cooked sweet potatoes can be stored for 12 months at minus 18 degrees Celsius. If there is enough space in the freezer, it is therefore a good idea to freeze a year's supply straight away.
