Dry dates in the sun
After the ripe dates have been collected, they are traditionally placed on the ground in the producing countries and dried in the sun. That works, provided the weather is nice and warm, even in our latitudes:
- Briefly wash the dates under running water.
- Place in the sun on a wire rack.
- The fruits are dried when they have a dull, somewhat wrinkled skin and at the same time have a soft, creamy flesh.
Dry the dates in the oven or in a dehydrator
If you decide on this variant, you should definitely pay attention to the correct temperature. If you dry the fruit too hot, the outer skin will solidify before the inner moisture has evaporated.
- The fresh, perfect dates are carefully washed.
- A temperature between 50 and 55 degrees is ideal.
- The drying time is around 26 hours. It depends on the size and thickness of the fruit. You should therefore check again and again whether the dates have already dried sufficiently.
How long do dried dates keep?
The dried fruits keep for at least a year due to the high sugar content. After that, the sugar begins to crystallize and the aroma subsides.
Store dates properly
Freshness Dates must be stored in a cool place will. Under no circumstances should you wrap the fruits in plastic, as they will spoil quickly. For storage, dried fruits are best placed in an air-permeable cardboard box.
Tips
If the dates become too hard and dry due to long storage, you can simply soak the fruits in warm water or milk. They soak up the liquid and become pleasantly soft again.
