From the bush to the cold as quickly as possible
Basically, goji berries should ripen on the bush as long as possible so that they can develop the best possible aroma. But then they already were harvested, freezing should not be the solution to the problem when eating fresh is no longer attractive due to its deteriorating quality. Let goji berries freeze one at a time
Similar to currants and other berries from the garden, goji berries shouldn't just go into one Freezer bags filled and frozen, otherwise a single, hard lump of fruit results. Ideally, place the goji berries in a single layer on a tray and let them freeze in the freezer for almost two hours before transferring them to a container. Alternatively, you can put it in a half-filled container with a lid in a freezer compartment and shake the container vigorously after just under two hours. This ensures that the Goji berries do not stick together too tightly when they are frozen and that they are easier to process later.
Use thawed goji berries for delicious recipes
Freezing berries is a method that preserves vitamins and other vital substances as well as the taste very well. However, the consistency of the fruit usually suffers from this method of preservation. In contrast to dried goji berries, thawed fruits are not so good as an ingredient in morning muesli. But they can still be used for a variety of delicious recipes:
- fruity sauces
- refreshing smoothies
- as a flavor ingredient in home-baked bread and in cakes
Tips
Goji berries can also be used with the green stem harvested and be frozen. The berries clump together even less when frozen and can be separated more easily when thawed.
