How to make delicious sugar lemons

Recipe for soaking lemons in sugar

You need:

  • 2 lemons *
  • 2 tbsp sea salt
  • 2 tbsp sugar **
  • 2-3 tbsp olive oil
  • Jar
  • peel
  • flat glass bowl with lid

* It is essential to use untreated lemons, preferably organic. Treated fruits have to be painstakingly peeled - apart from the fact that they are less tasty.

** We advise you to use birch sugar instead of conventional sugar. The latter has the property of being almost as sweet, but it is more beneficial to your health.

How to put lemons in sugar step by step

  1. Wash the lemons off under hot running water.
  2. Dry the fruits with kitchen paper.
  3. Use a sharp knife to cut the lemons into slices about two millimeters thick.
  4. Remove the seeds with clean hands or a spoon and discard them.
  5. Mix the salt and sugar evenly in a bowl.
  6. Scatter a (generous) layer of salt and sugar mixture into a shallow glass bowl.
  7. Spread a layer of lemon wedges on top.
  8. Sprinkle these again with the salt-sugar mixture (still generously!).
  9. Then put another layer of lemon wedges on top.
  10. Continue following the pattern until all of the lemon slices are layered on top of each other.
  11. Seal the glass bowl.
  12. Put the whole thing in a sunny place, such as on the windowsill, for three days. After a few hours, the lemon slices are already in their own juice.
  13. Shake the glass bowl every now and then and spoon some juice over the top slices, if they are not completely covered with juice.
  14. Sterilize a clean mason jar with boiling water.
  15. Layer the lemon slices (after three days) from the bowl into the mason jar.
  16. Then pour over the juice that has formed until all of the slices are covered.
  17. Add the olive oil.

Tips

The lemons are now ready and you can store them in the refrigerator for three to four months and enjoy them.

Note: Other methods of pickling lemons usually require the addition of heat - but this is more about canning or preserving than just pickling.
