Store briefly in the refrigerator
If the storage time for fresh strawberries is limited to 1 to 2 days, the vegetable compartment in the refrigerator is ideal. The fruits are not washed and certainly not cleaned if they are to keep their aroma. Ideally, fill the strawberries immediately after harvest in a freshness box lined with kitchen paper. Where the temperature in the refrigerator can be reduced to 0-2 degrees, the strawberries are still suitable for consumption after 5 days.
This turns the freezer into an aroma safe for strawberries
The storage of freshly harvested strawberries can be extended to an impressive 10 months if you use the fruit freeze. To ensure that this delicate procedure succeeds in an exemplary manner, you can choose from the following approaches:
- Wash and clean the strawberries and vacuum seal them in a freezer bag
- alternatively, halve the cleaned fruits, add sugar and freeze together with the skin
- frozen in the ice cube container with water or sparkling wine, the fruits can be removed individually during storage
- optionally puree the strawberries, add sugar and pour into the ice cube tray as a sauce
To prevent the frozen strawberries from becoming mushy after storage, they are individually pre-frozen on a tray. Then fill the fruit in a freezer bag to save space in the freezer.
Boil down properly for years of storage
Like a permanent one Preservation Our grandmothers showed how easy it is to make strawberries. The fruits are boiled down with plenty of sugar to make tempting jam or refreshing compote. The following aspects are relevant:
- Sterilize the mason jars, lids and rubber rings meticulously in boiling water
- only use fully ripe strawberries without damaging them
- Pour the fruit loosely into the glasses
- Dissolve 300 grams of sugar per liter of water and pour over the strawberries
- Clean the edge of the glass again, put on the rubber ring with the lid and fix it with a bracket
Now place the prepared preserving jars in a large kettle so that one third of them are in water. At 75 degrees the cooking process takes 25 minutes. The temperature is controlled with a special thermometer. As the jars cool down, the vacuum required for long storage is developed. They are in good hands in the cool, dark basement room at 12-16 degrees.
Tips & Tricks
Strawberries experience tipsy storage, inserted in high proof alcohol. The most famous version is the rum pot, which ensures the shelf life for 6-8 months and longer. The classic recipe uses 500 grams of strawberries, 250 grams of sugar and 1 bottle of 54 percent rum, covered with cellophane in a traditional rum pot.
