Which parts of the nasturtium can you pickle?
In principle, you can insert all parts of the nasturtium above ground, but the leaves are rarely used for this. If you have the dried and mix the crushed leaves with the same amount of salt, you get a very aromatic herbal salt. You can make a caper substitute from the buds and seeds. The flowers are ideal for soaking in vinegar or oil.

To make a flower vinegar, put a few flowers of your nasturtium in a wide-necked bottle and fill it up with a mild vinegar until the vinegar completely covers the flowers. Put the bottle in a dark place and shake its vinegar once a day. After four weeks it is ready and can be strained.
To make an oil, fill clean again blossoms in a wide-necked bottle and this time add a tasteless vegetable oil. Use a good quality canola or sunflower oil. It has to cover the flowers completely so that they don't go moldy. In contrast to vinegar, however, the oil draws in a light place, but is also shaken daily.
How to make your own caper substitute
In the past, caper substitutes from nasturtiums were only made for economic reasons. That is actually a shame, because this seasoning has its very own taste, spicy and slightly hot, which needs no comparison.
You can use the unopened buds as well as those that are still immature for the production Seeds Use the nasturtium. Both are boiled in a broth made of water, vinegar and salt and put into a screw-top jar while still hot. If you close this jar tightly immediately, your fake capers will keep for a few months.
