It is important that all vessels and lids are sterilized in boiling water for ten minutes before filling. Alternatively, this can also be done in the oven:

  1. Preheat the pipe to 140 degrees.
  2. Place the jars and lids on a baking sheet.
  3. Put in the oven and leave for ten minutes.

Spicy pickled cucumbers

Due to the variety of spices, the cooked cucumbers taste very aromatic.

ingredients

  • 5 - 6 cucumbers
  • 2 large onions
  • 500 ml apple cider vinegar
  • 500 ml of water
  • 100 g of sugar
  • 20 g of salt
  • 2 teaspoons of mustard seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon dried dill
  • 5 bay leaves
  • 5 juniper berries
  • ½ teaspoon chilli flakes

preparation

  1. Wash the cucumber thoroughly, cut in half, core and cut into slices about half a centimeter thick.
  2. Peel the onion and cut into fine rings.
  3. Layer the cucumbers in the jars, placing the onion rings evenly between them.
  4. Put all other ingredients in a large saucepan, bring to the boil and simmer for a minute.
  5. Pour the stock over the cucumber, making sure that there is a 2 centimeter wide rim at the top.

Reduce the cucumber

The preservation of the cucumber extends the shelf life of the cucumber.

  1. Place the glasses side by side on the grate of the preserving machine. They are not allowed to touch.
  2. Pour in enough water so that half of the vessels are in the liquid. # Boil down at 85 degrees for 30 minutes.
  3. Take out with the glass lifter and let cool down.
  4. Check that a vacuum has formed in all glasses. To do this, carefully lift the jar by the lid. With twist-off glasses, you can tell by the inward-pulling lid.
  5. Label, store in a cool and dark place.

Tips

Do not use overripe cucumbers for canning. Despite the sterile process, it can happen with these that they begin to ferment in the glass. This makes the entire content inedible.
