Store green asparagus upright
While you can store white asparagus wrapped in a tea towel and lay flat in the refrigerator, you need to store green asparagus upright. That's how it's done:
- fill a glass with cold water
- place the green asparagus upright with the ends down
- Put a plastic wrap over the heads to protect the green asparagus from drying out
- place the glass in a place protected from light

Incidentally, green asparagus, which was already a bit dry in the supermarket, becomes fresh again this way.
Freeze green asparagus
Even if green asparagus stays fresh a little longer with the storage described above, you should still consume it after three to four days. If there is no way to do this in the foreseeable future, you should freeze your green asparagus. When frozen, the shelf life is extended to several months. First of all, you should clean the bars under running water and then pat them dry so that no freezer burn forms. Cut off the woody ends and chop the sticks into small pieces depending on your intended use. Plastic bags are suitable as packaging. Green asparagus can be optimally portioned when frozen. After defrosting, cook the vegetables al dente again.
Attention: Green asparagus can only be stored unpeeled. Vegetables that have already been cooked should never be stored at room temperature.
