Make elderflower syrup

This is indispensable in "Hugo", a refreshing and very aromatic long drink.

Ingredients:

  2. Then cut off the thick stalks.

  4. Cover and let steep in the refrigerator for two days.
  5. Drain through a sieve into a saucepan.
  6. Sprinkle in the sugar and heat while stirring.
  7. Fill hot into previously sterilized bottles and close immediately.
  8. Let cool upside down.

Win elderberry juice

  1. Wash the elderberries thoroughly.
  2. Pluck from the stems and sort out unsightly fruits and stems.
  3. Put in a saucepan. Pour enough water so that the bottom is well covered with liquid.
  4. Bring the elderberries to the boil for about five minutes. They have to be soft well.
  5. Put a cheesecloth or gauze diaper in a kitchen strainer, place over a large bowl and pour the berries into it.
  6. Let the liquid drain off and squeeze out the fruit well, for example with a ladle.
  7. Fill the juice into previously sterilized bottles.
  8. Close and place on the grate of the preserving machine.
  9. Pour in enough water that at least half of the elderberry juice is in the liquid.
  10. Boil at 90 degrees for 30 minutes.

When prepared this way, elderberry juice will last three to six months.

If you wish, you can add 400 - 500 g of sugar to every two kilos of cleaned fruit. Boil the juice with the sugar and pour it boiling hot into previously sterilized bottles. By adding sugar, the elderberry juice can be kept for up to nine months.

Tips

You can cook an aromatic jam from the juice obtained. It tastes very fine if you use half for the jam elder and use another fruit such as apple or pear.
