How does the birch mushroom taste?

  • The young mushrooms have a pleasantly firm flesh. It tastes mildly sour.
  • Older mushrooms, on the other hand, are only suitable for consumption to a limited extent, as the meat becomes spongy and watery.
  • The stems of these specimens taste unpleasantly tough and woody and should not be used.

Drying birch mushrooms

By drying, you can preserve the collected mushrooms. As a result, they last for many months. Proceed as follows:

  1. Use only flawless and young birch buds.
  2. Thoroughly clean them with a brush or kitchen paper and cut into fine slices.
  3. If you have a dehydrator, place the mushrooms on the grilles so that they do not touch each other. Then kiln for two to three hours for 50 degrees.
  4. Alternatively, you can dry the birch mushrooms in the oven. Place them on a wire rack lined with baking paper and dry the birch seedlings in a fan oven for about three hours.

The birch mushrooms are very easy to air dry. Thread the birch mushroom discs on a string and hang them up so that the mushrooms get air from all sides. A shady place outdoors that cannot be reached by the sun is ideal for this. This also works in a dark, airy place in the house.

How long can the dried birch mushrooms keep?

When they are completely dry, you should pack the birch seedlings in a tightly fitting can. They last for several months.

Before processing, put the birch mushrooms in warm water for about half an hour. The dried mushrooms taste very tasty if you soak them in red wine before cooking.

Tips

You want to be absolutely sure that there are no insect eggs in the dried mushrooms after drying, you can put them in the freezer for at least 24 hours in an airtight packaging.
