Reduce the reindeer compote in the oven

For this delicious compote, in addition to classic mason jars with rubber rings, lids and metal clasps or twist-off glasses, you only need your oven and a drip pan.

ingredients

  • 1.5 kg of Renekloden
  • 300 g of sugar
  • 50 ml of water
  • 2 vanilla pods
  • 2 tbsp almond syrup

preparation

  1. Thoroughly wash the reindeer, cut in half and stone.
  2. Scrape out the pulp of the vanilla pod.
  3. Put the noble plums and all other ingredients in a large saucepan.
  4. Bring to the boil briefly and let simmer for six minutes.
  5. During this time, preheat the oven to 180 degrees.
  6. Pour the Renekloden into the previously sterilized jars. There should be a two centimeter wide margin towards the top.
  7. Close tightly immediately.
  8. Place glasses in the drip pan of the oven and pour three centimeters of water.
  9. Slide in on the bottom rail.
  10. Compote in eye keep. As soon as small bubbles rise in the glasses, switch off the tube.
  11. Leave the food in the oven for another thirty minutes.
  12. Then take it out, let it cool down and check whether a vacuum has formed in all the glasses.
  13. Store in a cool and dark area.

The cooked compote can be kept for many months. Serve it with a dollop of cream as a dessert or serve as a fruity side dish with ice cream.

Reduce the Reneklodenmalade

With the addition of sugar, the jam does not have to be additionally awakened. The jam will last for many months, provided you work very cleanly.

Ingredients:

  • 1 kg of Renekloden
  • Juice of three lemons
  • 500 g preserving sugar 2: 1

preparation

  1. Thoroughly wash the venison, stone and quarter.
  2. Mix the fruit with the lemon juice and the preserving sugar in a large saucepan and bring to the boil.
  3. Cook for four minutes, stirring constantly.
  4. Skim if necessary.
  5. Make a gel test. If this succeeds, fill jam boiling hot into previously sterilized jars. Otherwise, continue to boil for one to two minutes.
  6. Wipe the edge of the glass clean, close the container immediately.
  7. Turn over and let cool.
  8. Store in a cool and dark area.

Tips

When shopping, make sure that the Renekloden look firm and plump. The peel of the noble plums should shine slightly and the fruits exude an aromatic, sweet scent.
