With this method, there is no need to peel the fruit. However, nutrients are lost through heating. Core and chop the washed windfalls and fill the pot with water. The smaller you cut the apple pieces, the greater the juice yield.

Cover and let the mixture simmer for 20 minutes until a mushy applesauce has formed. Put this in a fine sieve or a cotton cloth and let the juice drain into a vessel overnight. Squeeze the mass out the next day.
