The tuber of the sweet potato is a real all-rounder in the kitchen. With its healthy ingredients, it enhances every dish and it also tastes really good. There are no limits to your creativity when preparing it, because the sweet potato can be boiled, baked or deep-fried. The sweet potato can even be eaten raw. However, it only develops its full aroma when it is cooked. We'll show you a few recipes that we liked very much and also reveal which preparation method is the healthiest.

The classic: the sweet potato fries

Sweet potato fries are a real treat when properly prepared. Because in contrast to french fries made from normal potatoes, sweet potato fries are a little trickier to prepare. The highlight: Regardless of whether they are prepared in the oven or in the deep fryer, sweet potato fries should always be soaked in cornstarch beforehand, as this is the only way to make them really crispy.

Preparation in the oven or deep fryer:

  • A sweet potato (cut into thicker or thinner fries, depending on your preference)
  • In addition, 1 tablespoon of cornstarch, 2 tablespoons of oil, salt and spices as desired
  • Mix the sweet potato fries well with the remaining ingredients
  • Oven: Preheat to 250 ° C and then place the fries in the oven on a baking sheet lined with baking paper. After 15-20 minutes the fries should be golden brown (depending on the thickness of the fries)
  • Deep fryer: Fry sweet potato fries at 140 ° C for 5 minutes and then drain well. After the sweet potatoes have cooled down, fry them a second time at 170 ° C and for 5 minutes. Here, too, the preparation time can vary depending on the thickness of the fries

In terms of taste, both variants are very tasty, although the fried fries are simply crispier. The finished fries go perfectly with a homemade burger. The fries are also the perfect side dish when grilling, whether with vegetables or meat.

Another popular form of preparation is the puree. Due to the beautiful orange color, a puree made from sweet potatoes is a real eye-catcher. It can be prepared very simply or refined a little more elaborately with other ingredients. When preparing it, you should always cook the sweet potato whole and with the skin on. This means that the ingredients remain protected and you get the most out of the tuber. For a puree, the tuber can be boiled or baked, but the sweet potato from the oven simply tastes best.

Preparation of the puree

  • Preheat the oven to 200 ° C
  • Then place whole sweet potatoes in the oven on a baking sheet and bake for about 1 hour
  • Use a knife to test whether the sweet potato is soft even at the thickest point
  • After cooking, the sweet potato is scraped out with a spoon and the whole is placed in a bowl
  • Now the sweet potato can be mixed with vegetable broth, herbs (e.g. B. Thyme), salt, pepper and a little lemon; if you like it particularly sweet, you can add a little honey
  • Everything is pureed vigorously for the perfect consistency
  • Tip: A few roasted pine nuts or sunflower seeds add the finishing touch

Due to the gentle preparation of the whole sweet potato, the puree is probably one of the healthiest forms of preparation. It goes well with a steak, but just as well with fish and other vegetables.

A similar form of preparation as the puree is the sweet potato soup. We particularly liked the preparation with ginger. Another vegetable that goes well with sweet potatoes is carrots. So a sweet potato, carrot and ginger soup can be just plain delicious! In addition, carrots and sweet potatoes are perfect sources of beta-carotene.

Preparing the sweet potato soup

  • In a saucepan, sweat 2 finely chopped garlic cloves and 2 finely chopped shallots in a little oil until translucent
  • Then add the chopped and peeled sweet potatoes (500 g) and carrots (200 g) to the pan. At the same time add the very finely chopped ginger (2 cm piece). Sweat everything briefly
  • Then fill up with 900 ml strong vegetable stock and simmer for 25 minutes. The soup is seasoned with curry (1 teaspoon), turmeric (1 teaspoon), salt and pepper
  • Now the soup is pureed for the right consistency
  • Finally, add créme fraîche (100 g), which makes the soup particularly creamy

The soup prepared here contains a total of up to 60 mg beta-carotene. Beta-carotene is required for the production of vitamin A. An adult human should ingest approximately 2 mg beta-carotene per day. The sweet potato soup prepared here is a perfect source of beta-carotene with 60 mg of the healthy ingredient.

Sweet potato casserole

The sweet potato is also a special treat for the palate as a casserole. There are already countless recipe suggestions on the Internet for a healthy and tasty casserole. Here we show you a basic recipe that can be quickly expanded with a little creativity. We were particularly impressed by the combination of sweet potatoes with hearty feta.

Preparing the casserole

  • Peel 1.2 kg of sweet potato and cut lengthways into thick slices
  • Marinate the slices with olive oil (4 -5 tbsp), half a bunch of thyme leaves, salt and pepper
  • Put the sweet potato slices in a baking dish and cover with aluminum foil
  • Then put the casserole dish in the preheated oven for 20 minutes (200 ° C top and bottom heat)
  • Then take the baking dish out of the oven and remove the aluminum foil
  • Crumble the feta over the slices and sprinkle with 60 g of roasted pine nuts
  • Now bake for another 10-15 minutes and drizzle with the juice of a lime before serving

Reader's tip: grilled sweet potato thalers

The sweet potato is also easy to prepare on the grill and tastes delicious. The main thing in this recipe is the marinade with chilli, which gives the sweet potatoes a particularly piquant taste.

Preparation of the sweet potato thalers

  • Put the chilli peppers in a mortar and finely crush them
  • Add rosemary, thyme, pepper, salt and pepper and stir with olive oil
  • Wash and peel the sweet potatoes and cut into approx. Cut 0.3-0.5 mm wide slices
  • Spread the spicy marinade on Taler and let it soak in a little
  • Place the sweet potato slices on a grill rack and grill each side for a few minutes
