It is better to pick summer apples a little too early than too late, because only then will they retain their aroma for a while. The summer apple varieties often have white cores, so you cannot rely on this ripeness indicator. It is therefore better to do a cutting test: cut the fruit in half and small pearls of juice should emerge immediately. The flesh of a ripe summer apple is creamy white with no greenish tinge.
