At the real artichoke are the stalks not edible. In the case of its relatives, the cardy and the wild artichoke, on the other hand, the stalks are considered a specialty.

Which artichoke-like plants have edible stalks?

The stalks of the safflower, also known as cardoon or Spanish artichoke, are often as a delicious winter vegetable eaten. You can even use the buds and stalks of the wild artichoke.

How are the stems of the plants prepared?

The stalks of the wild artichoke and safflower must prepared before cooking become. After the harvest the stalks are tied together for bleaching and wrapped with packing paper or straw. These packets are left in the sun to dry for 3 to 4 weeks. Then all hard parts, such as spines, fibrous leaf bases and skin must be removed. After cooking them in salted water with lemon, they can be enjoyed straight away. The sticks also taste delicious gratinated or on pizza.

Tip

The bleached stems are not durable

Once you've stripped the stalks of the wild artichoke or safflower from the solid parts, you should process them immediately. Otherwise they will turn black if stored in the air. If they cannot be processed immediately, the stalks should be stored in vinegar water.
