The steam juicer consists of three pots and a lid. The water is later filled into the lower pot, the middle one serves as a container for collecting the juice and the fruit is in the top part. The lower and middle parts have a funnel inside that tapers towards the top. Through this funnel, the water vapor is directed to the fruit. There he causes the cells of the fruit to burst so that the juice can escape.

So that the juice that is in the middle part of the juicers collects can be easily removed, it has an outlet opening or a short hose through which the juice can be drained. In the past, steam juicers were mostly made of enamel, but nowadays materials such as stainless steel or aluminum are more commonly used. Most of these devices are used on a stove. However, some models have their own heating element and draw the necessary power from the socket.

Instructions

  1. For the juicing fruit the lower pot is first filled with plenty of water and the middle part for the juice is placed on top.
  2. This is followed by the top pot with the basket. The fruits are placed in this basket. These do not have to be peeled or cored and the stalks can remain on the fruit.
  3. They should only be washed, of course, and with slightly larger fruit such as pears or apples, it makes sense to cut them into pieces so that the juice can escape more easily.
  4. Finally, the lid is put on and the steam extractor is placed on the stove and heated.
  5. When the water starts to boil, it rises in the form of steam to the top of the fruit.
  6. They burst from the heat, so the juice runs out of the skins and flows into the collection container.
  7. All the coarser parts of the fruit, such as the peel, stalks and seeds, remain in the fine-meshed basket and can be disposed of later.
  8. Depending on the type of fruit and the amount, juicing in a steam juicer can take up to four hours.

Further processing of the juice

Juice obtained using the steam juicing technique has a relatively long shelf life because it is sterilized by the high temperature of the steam. It can be bottled and keeps best in a cool and dark room. This juice can also be processed very well into jelly or liqueur. Different fruit juices can also be mixed according to taste. If you like it sweet, you can mix the juice with sugar. Then the juice should be boiled briefly so that the sugar dissolves.

Fruit juice jelly

  • For a fruit juice jelly, mix three quarters of a liter of juice with jam sugar. Either you take a kilo of jam sugar with a ratio of 1:1 or 500 grams of jam sugar with a ratio of 1:2.
  • This mixture is brought to the boil, should simmer for a few minutes and can then be poured into jamsglasses are filled.
  • It is important to carefully clean the glasses and rinse them as hot as possible just before filling them so that they do not burst from the hot jelly.
  • After being filled with jelly, the jars are turned upside down for a few minutes to allow the air to escape. This increases the shelf life of the jelly.
  • Then they can be turned over again and stored in the basement.
