The challenge of coring

Cutting off the pulp from the core piece by piece with a knife is still a viable option. But apart from the fact that this is a hell of a job, the result also leaves a lot to be desired. The olives should mostly be preserved as a whole or can then be cut into fine, even pieces. To do this, the core has to be removed without tearing the rest of the olive.

There are three methods

Olives are small and smooth. It is difficult to hold on and there is a high risk of injury when working with a sharp knife. It doesn't have to be, you can get rid of the annoying core as follows:

  • Remove the olive stone with an olive pitter
  • Press out the core with a knife blade
  • Core the olives with the rolling pin

Remove the olive stone with an olive pitter

Admittedly, an olive pitter is not part of the basic equipment of a kitchen in this country. It is only worth buying if the olive is used more often in cooking. It works in a similar way to the cherry stone removal device.

Put an olive in the tongs, press and the core is out. It continues with the next olive. It can sometimes take a long time to remove stones from a large number of olives.

Press out the core with a knife blade

A knife can still be of use when pitting olives. However, its long blade is not used for cutting. And this is how you remove the core with a knife:

  1. Choose a knife with a long blade.
  2. Spread the olives on a wooden board.
  3. Lay the blade flat on an olive. With a little skill and practice, you can also process several olives at the same time.
  4. Apply gentle pressure with the blade as you move the knife toward you and back several times. The olive rolls back and forth underneath.
  5. With the rolling motion and the gentle pressure, the core loosens and is pushed out. If it only partially protrudes from the olive, you can simply pull it out by hand.

Tips

When using this method, be particularly careful that the pressure applied is not too strong. Otherwise, both the olive and the stone can be crushed.

Core the olives with the rolling pin

Somewhere in a kitchen drawer there is a rolling pin that is always ready to use. The coring with this kitchen object works similarly to the knife variant described above. However, it is far more effective if there are many olives to be pitted.

The olives are spread out on a firm and level surface and rolled over several times with the rolling pin until the stones are out.
