Freezing or Preserving?

Anyone who has harvested or bought too many beans is faced with the question of how to preserve the green beans. Two methods then quickly come to mind: freezing or boiling. What is better?
If you have enough space in your freezer, consider freezing your green beans. Valuable nutrients are destroyed when they are boiled down, but the cold in the freezer cannot harm them. In addition, if you proceed correctly, the beautiful green color of the beans will be retained when they are frozen, but not when they are boiled down.

Can you freeze green beans raw?

Yes, French beans can be frozen raw. Rumor has it that green beans become poisonous when frozen raw. That's true in principle, because raw Beans are always poisonous. However, the freezing is irrelevant. As soon as you take your green beans out of the freezer and cook them thoroughly, the poisonous protein phasin is destroyed and the beans become edible - regardless of whether they were frozen or not.


Gourmets recommend not to thaw the green beans before cooking but to put them frozen in the hot water.

Freeze French beans step by step

It is better to blanch the green beans before freezing them. This will keep the color and texture better than if you freeze them raw. So do the following:

  • Sort out rotten, eaten or otherwise unsightly green beans.
  • Wash your beans thoroughly.
  • Cap the end and tip of the beans and cut them into portion-sized pieces.
  • Then let them cook in salted boiling water for 3 minutes.
  • Take out the beans and soak them in the coldest possible water.
  • Drain the beans well and / or dry them with a cloth.
  • Fill the green beans into a freezer bag or into a special container and seal it. Remove all air from the freezer bag.
  • Make a note of the freeze date.

How long can frozen green beans keep?

In a conventional freezer, you can store beans for between eight and ten months without any problems.
