White cabbage is not kale

Kale usually tastes bitter if it's harvested before it's cold. This is due to the high starch content and the low sugar content. If it gets cold around him, he cuts starch production, but continues to produce sugar and thus tastes less bitter and sweeter. This does not apply to the white cabbage. White cabbage doesn't taste bitter either way and therefore doesn't have to be harvested before the frost.

Is white cabbage hardy?

Whether or not white cabbage is hardy depends on the variety. Some White cabbage varieties, the so-called autumn white cabbage, is only planted in autumn, remains in the bed over winter and is harvested the following spring. To protect it from severe frost, consider placing a few twigs over your cabbage plants.
Early white cabbage varieties, on the other hand, are not always hardy and should therefore be harvested before the onset of winter. In general, it should be noted that white cabbage should never be harvested when it is frosty.

Do not plant white cabbage until after the frost

As with all vegetables, the same applies to white cabbage: only put the white cabbage plants outdoors when no more frost is to be expected. As a guideline, the ice saints in mid-May apply here. After this date, you can also sow your cabbage directly in the bed.

Freeze white cabbage

White cabbage can be frozen easily, raw, blanched or prepared. To do this, clean your cabbage thoroughly, cut it into strips or grate it and, ideally, briefly blanch it in hot water.
